Description

Manchego & Brown Butter Whipped Potatoes are a decadent twist on classic mashed potatoes. The richness of brown butter combined with the sharp, nutty flavor of Manchego cheese creates a luxurious side dish perfect for any special occasion!

  • 2 pounds Yukon Gold potatoes (peeled and cut into chunks)
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1/2 cup grated Manchego cheese
  • 2 tablespoons brown butter (recipe below)
  • Salt and pepper to taste
  • Fresh chives (optional, for garnish)

For the Brown Butter:

  • 1/4 cup unsalted butter

Instructions

  1. Make the Brown Butter: In a small saucepan, melt the unsalted butter over medium heat. Continue cooking for 4-5 minutes, swirling the pan occasionally, until the butter turns a golden-brown color and emits a nutty aroma. Remove from heat and set aside.
  2. Cook the Potatoes: Place the peeled and chopped Yukon Gold potatoes into a large pot and cover them with cold water. Add a pinch of salt and bring to a boil over high heat. Once boiling, reduce the heat and simmer for 15-20 minutes or until the potatoes are fork-tender.
  3. Whip the Potatoes: Drain the cooked potatoes and return them to the pot. Add the heavy cream and use a potato masher or a hand mixer to mash the potatoes until smooth and creamy.
  4. Add Cheese & Butter: Stir in the grated Manchego cheese, brown butter, and regular butter. Continue mixing until everything is well incorporated and the potatoes are fluffy and creamy.
  5. Season: Season with salt and pepper to taste.
  6. Serve: Transfer the whipped potatoes to a serving dish and garnish with fresh chives, if desired. Serve immediately!

Notes

  • For an even richer flavor, add a bit more brown butter to taste.
  • If you can’t find Manchego cheese, Pecorino Romano can be a good substitute.
