These Mango Bars with Lime Glaze are a tropical twist on classic lemon bars, featuring a smooth mango custard filling over a buttery shortbread crust, finished with a zesty lime glaze. Perfectly sweet, tart, and refreshing!

- For the Crust:
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, chilled and cubed
- For the Mango Filling:
- 1 cup mango puree (fresh or canned)
- 2 large eggs
- 2/3 cup granulated sugar
- 2 tbsp lime juice
- 2 tbsp all-purpose flour
- 1 tsp lime zest
- For the Lime Glaze:
- 1/2 cup powdered sugar
- 1–2 tbsp lime juice (to desired consistency)
- Extra lime zest, for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides.
- In a bowl, mix flour and powdered sugar for the crust. Cut in butter with a pastry cutter or fork until mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared pan. Bake for 15–18 minutes or until lightly golden. Set aside to cool slightly.
- In another bowl, whisk together mango puree, eggs, granulated sugar, lime juice, flour, and lime zest until smooth.
- Pour the mango filling over the partially baked crust and return to oven. Bake for 20–25 minutes, or until the center is set and no longer jiggles.
- Let bars cool completely in the pan, then refrigerate for at least 2 hours to firm up.
- In a small bowl, whisk together powdered sugar and lime juice for the glaze until smooth. Drizzle over chilled bars and sprinkle with lime zest if using.
- Cut into squares and serve chilled.
Notes
- Use ripe, sweet mangoes for the best flavor. Canned mango puree works well too.
- For a gluten-free version, substitute the flour with a gluten-free 1:1 baking blend.
- Store bars in the refrigerator for up to 4 days.
