Description

These Mango Bars with Lime Glaze are a tropical twist on classic lemon bars, featuring a smooth mango custard filling over a buttery shortbread crust, finished with a zesty lime glaze. Perfectly sweet, tart, and refreshing!

  • For the Crust:
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • For the Mango Filling:
  • 1 cup mango puree (fresh or canned)
  • 2 large eggs
  • 2/3 cup granulated sugar
  • 2 tbsp lime juice
  • 2 tbsp all-purpose flour
  • 1 tsp lime zest
  • For the Lime Glaze:
  • 1/2 cup powdered sugar
  • 12 tbsp lime juice (to desired consistency)
  • Extra lime zest, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides.
  2. In a bowl, mix flour and powdered sugar for the crust. Cut in butter with a pastry cutter or fork until mixture resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of the prepared pan. Bake for 15–18 minutes or until lightly golden. Set aside to cool slightly.
  4. In another bowl, whisk together mango puree, eggs, granulated sugar, lime juice, flour, and lime zest until smooth.
  5. Pour the mango filling over the partially baked crust and return to oven. Bake for 20–25 minutes, or until the center is set and no longer jiggles.
  6. Let bars cool completely in the pan, then refrigerate for at least 2 hours to firm up.
  7. In a small bowl, whisk together powdered sugar and lime juice for the glaze until smooth. Drizzle over chilled bars and sprinkle with lime zest if using.
  8. Cut into squares and serve chilled.

Notes

  • Use ripe, sweet mangoes for the best flavor. Canned mango puree works well too.
  • For a gluten-free version, substitute the flour with a gluten-free 1:1 baking blend.
  • Store bars in the refrigerator for up to 4 days.
