Description

  • 1/4 cup chicken broth (or water)
  • 1 tbsp fresh lime juice (optional)
  • 1 tsp ground ginger
  • 1/2 tsp ground turmeric (optional)
  • 1/4 tsp red pepper flakes (optional, for a bit of heat)

Instructions

  1. Prepare the Chicken:

    • Season the chicken breasts with salt and pepper on both sides.
    • Heat olive oil in a large skillet over medium-high heat.
  2. Cook the Chicken:

    • Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until golden brown and fully cooked through. Remove the chicken from the skillet and set it aside.
  3. Prepare the Mango Chutney Sauce:

    • In the same skillet, add the mango chutney, chicken broth (or water), lime juice (if using), ginger, turmeric, and red pepper flakes. Stir everything together to combine and bring the sauce to a simmer. Let it cook for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Combine Chicken with Sauce:

    • Return the chicken breasts to the skillet and spoon the mango chutney sauce over the chicken. Let the chicken simmer in the sauce for an additional 3-4 minutes to absorb the flavors.
  5. Serve:

    • Garnish with chopped fresh cilantro and serve the mango chutney chicken with rice, vegetables, or a side salad.

Notes

  • If you want extra heat, you can add more red pepper flakes or even a chopped fresh chili.
  • You can make this dish with chicken thighs if you prefer dark meat over chicken breasts.
