- 2 large eggs

- 1 tbsp butter
- Maple Mustard Sauce:
- 1 tbsp Dijon mustard
- 1 tbsp maple syrup
- 1/2 tsp mayonnaise (optional, for creaminess)
- Pinch of salt and black pepper
Instructions
- In a small bowl, mix Dijon mustard, maple syrup, and mayo (if using) until smooth. Set aside.
- In a nonstick skillet over medium heat, melt butter. Crack eggs into the pan and scramble gently, seasoning with salt and pepper. Cook until just set but still soft.
- While eggs cook, lightly toast croissant halves in a toaster or skillet, cut-side down, until golden and warm.
- Spread the maple mustard sauce on the bottom half of each croissant.
- Top each with scrambled eggs, a slice of cheese, and bacon or ham.
- Cap with the top croissant half. Serve warm.
