  • Maple Mustard Sauce:
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • 1/2 tsp mayonnaise (optional, for creaminess)
  • Pinch of salt and black pepper

Instructions

  1. In a small bowl, mix Dijon mustard, maple syrup, and mayo (if using) until smooth. Set aside.
  2. In a nonstick skillet over medium heat, melt butter. Crack eggs into the pan and scramble gently, seasoning with salt and pepper. Cook until just set but still soft.
  3. While eggs cook, lightly toast croissant halves in a toaster or skillet, cut-side down, until golden and warm.
  4. Spread the maple mustard sauce on the bottom half of each croissant.
  5. Top each with scrambled eggs, a slice of cheese, and bacon or ham.
  6. Cap with the top croissant half. Serve warm.
