Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, garlic, Dijon mustard, honey, oregano, thyme, paprika, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any leftover marinade.
  4. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked.
  5. Remove from the grill and let the chicken rest for 5 minutes before serving.

Notes

  • For extra flavor, marinate the chicken overnight.
  • If you don’t have a grill, you can cook the chicken in a grill pan or on a stovetop skillet.
