Description

This hearty Marry Me Sausage Orzo Soup combines savory Italian sausage, fresh vegetables, and tender orzo pasta in a rich, flavorful broth. It’s the perfect comfort food to warm your soul, making it ideal for family dinners or cozy nights in.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 2 ribs celery, diced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups fresh spinach, roughly chopped
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for garnish

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add the sausage, breaking it into crumbles, and cook until browned. Drain excess fat.
  • Add the onion, garlic, carrot, and celery. Sauté until vegetables are softened, about 5 minutes.
  • Stir in the diced tomatoes (with juices), oregano, basil, and red pepper flakes. Pour in the chicken broth and bring to a boil.
  • Add the orzo and cook for 8-10 minutes, stirring occasionally until orzo is tender.
  • Stir in spinach and cook until wilted. Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with freshly grated Parmesan cheese. Serve hot and enjoy!

Notes

  • Adjust the spice level by using mild or spicy Italian sausage and modifying the red pepper flakes.
  • This soup is best enjoyed fresh but can be stored for later use.
