Description

This Marshmallow Popcorn Bark is a fun and festive treat that combines crunchy popcorn, gooey marshmallows, and creamy chocolate. With rainbow sprinkles and optional pretzel pieces, it’s the perfect combination of sweet, salty, and crunchy. A great treat for parties, family gatherings, or movie nights!

Ingredients

Scale
  • 1 bag microwave popcorn (about 3 cups popped)
  • 2 cups mini marshmallows
  • 1 cup white chocolate chips
  • ½ cup milk chocolate chips
  • ¼ cup rainbow sprinkles
  • ¼ cup pretzels, broken into pieces (optional)

Instructions

  • Pop the Popcorn:
Start by popping your microwave popcorn according to the package instructions. Once popped, transfer it to a large mixing bowl and remove any unpopped kernels to avoid unpleasant surprises in your bark.
  • Melt the Chocolates:
In separate microwave-safe bowls, melt the white chocolate chips and milk chocolate chips. Heat in 30-second intervals, stirring after each round, until smooth and fully melted.
  • Melt the Marshmallows:
In a saucepan over low heat, melt the mini marshmallows, stirring constantly until they’re gooey and smooth. Immediately drizzle the melted marshmallows over the popcorn, tossing gently to coat all the kernels evenly.
  • Drizzle the Chocolates:
Pour the melted white and milk chocolates over the marshmallow-coated popcorn. Use a spoon to drizzle generously, ensuring every piece gets a bit of chocolate goodness.
  • Add Sprinkles and Pretzels:
Sprinkle the rainbow sprinkles and broken pretzel pieces over the mixture for a festive and crunchy finish.
  • Chill to Set:
Spread the mixture evenly on a parchment-lined baking sheet. Place it in the refrigerator for about 30 minutes to allow everything to set and harden.
  • Break and Serve:
Once set, break the bark into bite-sized pieces and serve. Watch it disappear in no time!

Notes

  • If you prefer a thicker layer of chocolate, feel free to melt more white or milk chocolate and drizzle more over the bark.
  • To add extra flavor, consider adding chopped nuts or M&Ms for an additional layer of texture and color.
  • Pretzels are optional but add a nice salty crunch that complements the sweetness of the marshmallows and chocolate.
