  • 2 cups semisweet chocolate chips
  • 1 cup chopped walnuts
  • 5 1/2 cups (10.5-ounce package) rainbow-colored miniature marshmallows
  • 1 cup flaked coconut

Instructions

  • Melt the Butter and Chocolate:
    In a pan over low heat, melt the butter and semisweet chocolate chips. Stir occasionally to ensure the mixture is smooth and fully combined. Allow the melted mixture to cool slightly so that when you add the marshmallows, they don’t melt.
  • Add Walnuts and Marshmallows:
    Stir in the chopped walnuts and rainbow-colored miniature marshmallows. Mix gently to coat the marshmallows and walnuts with the chocolate mixture.
  • Let Cool:
    Allow the chocolate-marshmallow mixture to cool to room temperature.
  • Coat with Coconut:
    Spread the flaked coconut out on a sheet of waxed paper. Divide the cooled mixture into two equal portions and form each portion into a long log shape. Use the parchment paper to roll each log back and forth to coat them with the coconut. The mixture may be sticky, but the coconut will stick easily.
  • Wrap and Refrigerate:
    Once the logs are coated with coconut, wrap each one tightly in waxed paper and then in plastic wrap. Refrigerate the logs overnight, or for a few hours, to allow them to firm up.
  • Serve:
    When ready to serve, remove the rolls from the refrigerator and let them defrost slightly. Slice the logs into approximately 1/3-inch thick slices, revealing the colorful marshmallow pattern inside.
