- 1/4 cup breadcrumbs
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil (for frying)
- 8 oz mushrooms, sliced (button or cremini)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 2 tbsp flour (for thickening)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- For the Mashed Potatoes:
- Boil the Potatoes: Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
- Mash the Potatoes: Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy. Adjust seasoning if needed.
- For the Meatball Mushroom Stew:
- Make the Meatballs: In a bowl, mix the ground beef, breadcrumbs, egg, garlic powder, onion powder, thyme, salt, and pepper. Form into small meatballs, about 1 inch in diameter.
- Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Fry the meatballs until browned on all sides, about 5-7 minutes. Remove from the skillet and set aside.
- Cook the Mushrooms and Onions: In the same skillet, add the chopped onions and sliced mushrooms. Cook until golden and soft, about 5 minutes. Add minced garlic and cook for another minute.
- Make the Gravy: Sprinkle the flour over the mushroom mixture and stir to coat. Gradually pour in the beef broth and Worcestershire sauce, stirring until thickened.
