- Boil the Potatoes: Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
- Mash the Potatoes: Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy, adjusting seasoning as needed.
- For the Meatball Mushroom Stew:
- Make the Meatballs: In a bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, thyme, salt, and pepper. Form into small meatballs, about 1 inch in diameter.
- Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Fry meatballs until browned on all sides, about 5-7 minutes. Remove and set aside.
- Cook the Mushrooms and Onions: In the same skillet, add chopped onions and sliced mushrooms. Cook until golden, about 5 minutes. Add minced garlic and cook for another minute.
- Make the Gravy: Sprinkle flour over the mushroom mixture and stir. Gradually add beef broth while stirring to avoid lumps. Add Worcestershire sauce, simmer for 5-7 minutes until thickened.
- Finish the Stew: Add meatballs back to the skillet, cover, and simmer for 10 minutes.
- Serve: Plate mashed potatoes and ladle the meatball mushroom stew over the top. Garnish with chopped parsley.
