Description

These McGriddle Bites are the perfect handheld breakfast treat, combining the savory goodness of sausage, cheese, and a touch of maple syrup in bite-sized form!   • 1 package (8 oz) breakfast sausage
  • 1 cup pancake mix (plus ingredients required on the box, typically water or milk, eggs, etc.)
  • 1 tablespoon maple syrup
  • 1 cup shredded cheddar cheese
  • ¼ cup milk (for pancake batter)
  • 1 tablespoon butter (for greasing the pan)
  • Maple syrup, for drizzling (optional)

Instructions

  1. Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Break the sausage into small crumbles while cooking. Remove from the pan and set aside.
  2. Prepare the pancake batter according to the instructions on the package, adding 1 tablespoon of maple syrup into the batter for a subtle sweet flavor.
  3. Grease a mini muffin tin with butter or cooking spray. Pour the pancake batter into the muffin cups, filling each about ⅔ full.
  4. Add a spoonful of cooked sausage crumbles and a pinch of shredded cheddar cheese into each muffin cup.
  5. Bake at 375°F (190°C) for about 12-15 minutes or until the pancake bites are golden and cooked through.
  6. Remove from the oven and allow them to cool slightly before serving. Optionally, drizzle with additional maple syrup for extra sweetness.
