For the Muffins:

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or milk)
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/2 cup maple syrup (for the maple flavor)
  • 6 slices of cooked bacon or sausage patties, chopped
  • 1 cup shredded cheese (cheddar or American, optional)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  • Prepare the Batter:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, beat the eggs, then whisk in the buttermilk, melted butter, and maple syrup.
  • Combine the Ingredients:
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  • Add the Bacon or Sausage:
    • Gently fold in the cooked and chopped bacon or sausage patties. If using, you can also fold in the shredded cheese at this stage.
  • Fill the Muffin Tin:
    • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  • Serve:
    • Let the muffins cool slightly before serving. For extra maple flavor, drizzle a bit of syrup on top before eating.
