Description

A delicious fusion of classic meatloaf and grilled cheese, featuring hearty slices of meatloaf melted with gooey cheese between buttery toasted bread.


Ingredients

  • 4 slices of bread (white, whole wheat, or your choice)
  • 8 oz leftover meatloaf, sliced about 1/2 inch thick
  • 4 slices cheddar cheese
  • 2 tbsp butter, softened
  • Optional: ketchup or BBQ sauce for spreading

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Butter one side of each bread slice.
  3. Place two slices, butter-side down, on the skillet.
  4. Layer each with slices of meatloaf, then a slice or two of cheddar cheese.
  5. Top with remaining bread slices, butter-side up.
  6. Cook for 3-4 minutes per side until bread is golden brown and cheese is melted, pressing gently with a spatula.
  7. Remove from skillet, let cool slightly, then slice and serve. Optionally, serve with ketchup or BBQ sauce for dipping.
