Description

A hearty and flavorful tortellini salad loaded with Italian sausage, fresh veggies, and a tangy vinaigrette—perfect for potlucks or a satisfying lunch.


Ingredients

  • 12 oz cheese tortellini
  • 8 oz Italian sausage, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup sliced black olives
  • 1/4 cup diced red onion
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil or parsley
  • 1/3 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions. Drain and rinse under cold water to cool.
  2. Cook Italian sausage in a skillet over medium heat until browned and cooked through. Drain excess fat and let cool.
  3. In a large bowl, combine cooled tortellini, cooked sausage, cherry tomatoes, cucumber, olives, red onion, mozzarella, and fresh herbs.
  4. Pour Italian dressing over the salad and toss gently to combine.
  5. Season with salt and pepper to taste.
  6. Chill for at least 30 minutes before serving for flavors to meld.
