- 12 oz cheese tortellini
- 8 oz Italian sausage, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/4 cup sliced black olives
- 1/4 cup diced red onion
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh basil or parsley
- 1/3 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook tortellini according to package instructions. Drain and rinse under cold water to cool.
- Cook Italian sausage in a skillet over medium heat until browned and cooked through. Drain excess fat and let cool.
- In a large bowl, combine cooled tortellini, cooked sausage, cherry tomatoes, cucumber, olives, red onion, mozzarella, and fresh herbs.
- Pour Italian dressing over the salad and toss gently to combine.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving for flavors to meld.
