Ingredients

- 1 (14 oz) can artichoke hearts, drained and quartered
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 (15 oz) can chickpeas, drained and rinsed
- 1/4 cup fresh parsley, chopped
- 2 tbsp capers
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the artichoke hearts, cherry tomatoes, red onion, chickpeas, parsley, and capers.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to coat all the ingredients.
- Let the salad sit for 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.

Best served fresh but can be stored in the fridge for up to 3 days.
