Description

Mediterranean Beef Kabobs are juicy, marinated beef skewers grilled to perfection with vibrant vegetables and bold Mediterranean flavors. Theyโ€™re perfect for summer cookouts or a healthy, flavorful dinner served with tzatziki, hummus, or warm pita.


Ingredients

  • 1.5 lbs beef sirloin or tenderloin, cut into 1.5-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced into thick rounds
  • 8 metal or soaked wooden skewers
  • For the marinade:
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper to make the marinade.
  2. Place beef cubes in a resealable plastic bag or bowl. Pour the marinade over the beef, seal or cover, and refrigerate for at least 2 hours or overnight for best flavor.
  3. Preheat grill to medium-high heat. Thread the marinated beef and vegetables alternately onto the skewers.
  4. Grill the kabobs for 10โ€“12 minutes, turning occasionally, until beef reaches desired doneness and vegetables are charred and tender.
  5. Remove from grill and let rest for 5 minutes. Serve with tzatziki sauce, pita bread, or a fresh Greek salad.
