Description

This Mediterranean Grilled Cheese Sandwich is a savory twist on the classic grilled cheese. Loaded with creamy feta cheese, sun-dried tomatoes, olives, and fresh spinach, it’s the perfect fusion of Mediterranean flavors in a crispy, melty sandwich!


Ingredients

  • 2 slices of whole-grain or sourdough bread
  • 1 tablespoon olive oil or butter (for grilling)
  • 2 tablespoons creamy feta cheese, crumbled
  • 2 tablespoons sun-dried tomatoes, chopped
  • 2 tablespoons Kalamata olives, pitted and sliced
  • 1/4 cup fresh spinach leaves
  • 1 slice mozzarella cheese or provolone cheese
  • 1 tablespoon fresh basil (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients:

    • Crumble the feta cheese and chop the sun-dried tomatoes and Kalamata olives.
    • Wash and dry the spinach leaves.
    • Slice the bread if not pre-sliced.
  2. Assemble the Sandwich:

    • Lay the slices of bread flat on a clean surface.
    • Spread the feta cheese, sun-dried tomatoes, olives, and spinach evenly on one slice of bread.
    • Place the slice of mozzarella or provolone cheese on top.
    • Add fresh basil (optional) for extra flavor, and season with a pinch of salt and pepper.
  3. Grill the Sandwich:

    • Heat a skillet or griddle over medium heat and add the olive oil or butter.
    • Once the skillet is hot, place the sandwich in the pan, pressing it down slightly with a spatula.
    • Grill the sandwich for 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese has melted.
  4. Serve:

    • Once the sandwich is grilled to perfection, remove it from the pan and let it rest for a minute before slicing.
    • Serve immediately with a side of pickles, chips, or a light salad.

Notes

  • Add Veggies: You can also add roasted red peppers, zucchini, or artichoke hearts to the sandwich for more Mediterranean flavor.
  • For Extra Crunch: Consider adding a sprinkle of Parmesan cheese to the outside of the bread before grilling for an extra crispy, cheesy crust.
