  • 4 oz Feta Cheese, crumbled
  • 1/4 cup Kalamata Olives, pitted and sliced
  • 1/4 cup Roasted Red Peppers, drained and sliced
  • 2 tbsp Fresh Basil or Oregano, chopped
  • 1 tbsp Olive Oil (for grilling)
  • 12 tbsp Butter (for spreading on bread)
  • 1/4 cup Fresh Spinach or Arugula (optional for extra greens)
  • 1/2 tsp Garlic Powder (optional, for extra flavor)
  • Salt and Pepper, to taste

Instructions

  1. Prepare the Filling:
    • In a small bowl, combine the crumbled feta cheese, sliced Kalamata olives, roasted red peppers, fresh herbs (basil or oregano), and optional garlic powder. Season with a pinch of salt and pepper to taste. If you’re using spinach or arugula, add that as well.
  2. Assemble the Sandwich:
    • Butter one side of each slice of bread.
    • Place one slice of bread, butter side down, on a clean surface. Spread the feta mixture evenly over the slice.
    • Top with the second slice of bread, butter side up, to form the sandwich.
  3. Grill the Sandwich:
    • Heat a nonstick skillet or griddle over medium heat and add a drizzle of olive oil.
    • Place the sandwich in the skillet and cook for about 3-4 minutes per side, or until the bread is golden brown and crispy, and the cheese has melted inside.
    • Press down lightly with a spatula to ensure even grilling.
  4. Serve:
    • Once the sandwich is toasted to perfection, remove it from the skillet and let it rest for a minute.
    • Slice the sandwich in half and serve with a side salad or chips, if desired. Enjoy!
