- 4 slices Bread (sourdough, whole wheat, or your choice)
- 4 oz Feta Cheese, crumbled
- 1/4 cup Kalamata Olives, pitted and sliced
- 1/4 cup Roasted Red Peppers, drained and sliced
- 2 tbsp Fresh Basil or Oregano, chopped
- 1 tbsp Olive Oil (for grilling)
- 1–2 tbsp Butter (for spreading on bread)
- 1/4 cup Fresh Spinach or Arugula (optional for extra greens)
- 1/2 tsp Garlic Powder (optional, for extra flavor)
- Salt and Pepper, to taste
Instructions
- Prepare the Filling:
- In a small bowl, combine the crumbled feta cheese, sliced Kalamata olives, roasted red peppers, fresh herbs (basil or oregano), and optional garlic powder. Season with a pinch of salt and pepper to taste. If you’re using spinach or arugula, add that as well.
- Assemble the Sandwich:
- Butter one side of each slice of bread.
- Place one slice of bread, butter side down, on a clean surface. Spread the feta mixture evenly over the slice.
- Top with the second slice of bread, butter side up, to form the sandwich.
- Grill the Sandwich:
- Heat a nonstick skillet or griddle over medium heat and add a drizzle of olive oil.
- Place the sandwich in the skillet and cook for about 3-4 minutes per side, or until the bread is golden brown and crispy, and the cheese has melted inside.
- Press down lightly with a spatula to ensure even grilling.
- Serve:
- Once the sandwich is toasted to perfection, remove it from the skillet and let it rest for a minute.
- Slice the sandwich in half and serve with a side salad or chips, if desired. Enjoy!

- You can substitute goat cheese or mozzarella for feta if you prefer a milder cheese.
