This Mediterranean Lemon Chicken with Artichokes & Olives is a vibrant, flavorful dish that combines tender chicken with tangy lemon, briny olives, and juicy artichokes. It’s a simple yet elegant meal that’s perfect for weeknight dinners or special occasions.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 1 lemon, thinly sliced
- 1 cup green olives, pitted
- 1 cup artichoke hearts, drained and quartered (fresh or jarred)
- 1/2 cup chicken broth
- 1/4 cup white wine (optional, or use more chicken broth)
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prepare the Chicken: Season the chicken breasts on both sides with salt, pepper, oregano, thyme, and garlic powder.
- Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- Sauté the Garlic: In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the Broth and Wine: Add the chicken broth and white wine to the skillet, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer.
- Combine the Ingredients: Add the sliced lemon, olives, and artichoke hearts to the skillet, stirring to combine.
- Cook the Chicken: Return the chicken breasts to the skillet, nestling them into the sauce. Cover and simmer for 15-20 minutes, or until the chicken is fully cooked through and reaches an internal temperature of 165°F (75°C).
- Finish and Serve: Garnish with freshly chopped parsley and serve the chicken with the sauce and vegetables over rice, quinoa, or a bed of greens.
Notes
- You can use bone-in, skin-on chicken thighs instead of chicken breasts for a juicier result.
- For a dairy-free option, skip any cheese toppings.
- If you prefer a spicier dish, add a pinch of red pepper flakes or a diced fresh chili.
- This dish pairs well with roasted vegetables or a simple Mediterranean salad.
