  • 1 cup green olives, pitted
  • 1 cup artichoke hearts, drained and quartered (fresh or jarred)
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional, or use more chicken broth)
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken: Season the chicken breasts on both sides with salt, pepper, oregano, thyme, and garlic powder.
  2. Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
  3. Sauté the Garlic: In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the Broth and Wine: Add the chicken broth and white wine to the skillet, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer.
  5. Combine the Ingredients: Add the sliced lemon, olives, and artichoke hearts to the skillet, stirring to combine.
  6. Cook the Chicken: Return the chicken breasts to the skillet, nestling them into the sauce. Cover and simmer for 15-20 minutes, or until the chicken is fully cooked through and reaches an internal temperature of 165°F (75°C).
  7. Finish and Serve: Garnish with freshly chopped parsley and serve the chicken with the sauce and vegetables over rice, quinoa, or a bed of greens.
