Description

This vibrant Mediterranean olive oil dip brings together savory herbs, zesty lemon, and a hint of spice. It’s perfect for pairing with warm, crusty bread for a delicious appetizer or snack!


Ingredients

  • ¾ cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons sundried tomatoes, finely chopped
  • 1 tablespoon Kalamata olives, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 3 garlic cloves, crushed
  • 2 teaspoons red chili flakes
  • 1 teaspoon sumac
  • Zest of 1 lemon
  • 1 teaspoon flaky sea salt (adjust to taste)

Instructions

  • Combine Ingredients: In a small bowl or shallow plate with a lip, add the olive oil, balsamic vinegar, Parmesan cheese, sundried tomatoes, Kalamata olives, rosemary, thyme, crushed garlic, chili flakes, sumac, and lemon zest.
  • Mix Well: Stir thoroughly to ensure all the ingredients are evenly combined. Taste, then add additional flaky sea salt if desired.
  • Serve: Serve the dip directly from the mixing bowl or transfer to a small serving bowl for a lovely presentation. This dip pairs beautifully with fresh bread, like focaccia, crusty baguette, or rosemary Parmesan bread.
