- ¾ cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- ½ cup freshly grated Parmesan cheese
- 2 tablespoons sundried tomatoes, finely chopped
- 1 tablespoon Kalamata olives, finely chopped
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 3 garlic cloves, crushed
- 2 teaspoons red chili flakes
- 1 teaspoon sumac
- Zest of 1 lemon
- 1 teaspoon flaky sea salt (adjust to taste)
Instructions
- Combine Ingredients: In a small bowl or shallow plate with a lip, add the olive oil, balsamic vinegar, Parmesan cheese, sundried tomatoes, Kalamata olives, rosemary, thyme, crushed garlic, chili flakes, sumac, and lemon zest.
- Mix Well: Stir thoroughly to ensure all the ingredients are evenly combined. Taste, then add additional flaky sea salt if desired.
- Serve: Serve the dip directly from the mixing bowl or transfer to a small serving bowl for a lovely presentation. This dip pairs beautifully with fresh bread, like focaccia, crusty baguette, or rosemary Parmesan bread.
