These Mediterranean Salmon Patties are full of flavor, with a mix of tender salmon, fresh herbs, and classic Mediterranean ingredients. Perfect for a healthy dinner or a light appetizer, these patties are packed with protein and omega-3s, and they come together quickly.

- 2 cans (6 oz each) wild-caught salmon, drained and flaked
- 1/2 cup breadcrumbs (or almond flour for gluten-free)
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 2 cloves garlic, minced
- 1/4 cup red onion, finely diced
- 1 large egg
- 1 tbsp olive oil
- 1 tsp lemon zest
- 1 tbsp lemon juice
- Salt and pepper, to taste
- 2 tbsp olive oil (for cooking)
Instructions
- In a large bowl, combine the flaked salmon, breadcrumbs (or almond flour), crumbled feta cheese, parsley, dill, garlic, red onion, lemon zest, and lemon juice.
- Crack the egg into the mixture and season with salt and pepper. Mix everything together until well combined.
- Shape the mixture into patties, about 3-4 inches in diameter. You should get about 8-10 patties.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, carefully add the salmon patties to the pan. Cook in batches if necessary to avoid overcrowding.
- Cook the patties for 4-5 minutes per side, or until golden brown and crispy on the outside and cooked through on the inside.
- Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve the patties warm with a side of Greek yogurt, tzatziki sauce, or a fresh salad.
Notes
- You can substitute fresh herbs with dried herbs if needed. Use 1 tsp of dried parsley and dill for each.
- For extra flavor, add a pinch of crushed red pepper flakes to the mixture for a mild heat.
- These patties can also be baked: Place them on a lined baking sheet and bake at 375°F (190°C) for about 20-25 minutes, flipping halfway through.
- Make sure to drain the canned salmon thoroughly before using it to avoid excess moisture.
