Description

These Mediterranean Salmon Patties are full of flavor, with a mix of tender salmon, fresh herbs, and classic Mediterranean ingredients. Perfect for a healthy dinner or a light appetizer, these patties are packed with protein and omega-3s, and they come together quickly.


Ingredients

  • 2 cans (6 oz each) wild-caught salmon, drained and flaked
  • 1/2 cup breadcrumbs (or almond flour for gluten-free)
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 2 cloves garlic, minced
  • 1/4 cup red onion, finely diced
  • 1 large egg
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 2 tbsp olive oil (for cooking)

Instructions

  1. In a large bowl, combine the flaked salmon, breadcrumbs (or almond flour), crumbled feta cheese, parsley, dill, garlic, red onion, lemon zest, and lemon juice.
  2. Crack the egg into the mixture and season with salt and pepper. Mix everything together until well combined.
  3. Shape the mixture into patties, about 3-4 inches in diameter. You should get about 8-10 patties.
  4. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, carefully add the salmon patties to the pan. Cook in batches if necessary to avoid overcrowding.
  5. Cook the patties for 4-5 minutes per side, or until golden brown and crispy on the outside and cooked through on the inside.
  6. Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.
  7. Serve the patties warm with a side of Greek yogurt, tzatziki sauce, or a fresh salad.

Notes

  • You can substitute fresh herbs with dried herbs if needed. Use 1 tsp of dried parsley and dill for each.
  • For extra flavor, add a pinch of crushed red pepper flakes to the mixture for a mild heat.
  • These patties can also be baked: Place them on a lined baking sheet and bake at 375°F (190°C) for about 20-25 minutes, flipping halfway through.
  • Make sure to drain the canned salmon thoroughly before using it to avoid excess moisture.
