Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 tbsp olive oil, divided
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp ground turmeric
  • ½ tsp smoked paprika
  • ½ tsp ground coriander
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk or heavy cream
  • 12 tbsp fresh lemon juice (to taste)
  • Salt and black pepper, to taste
  • Fresh herbs (parsley, dill, or cilantro), for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, or until golden and tender.
  2. In a large pot, heat remaining 1 tbsp olive oil over medium heat. Add onion and cook until translucent, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in cumin, turmeric, smoked paprika, and coriander. Cook for 30 seconds. Add roasted cauliflower and broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Use an immersion blender to purée the soup until smooth, or transfer in batches to a countertop blender and blend carefully.
  5. Stir in coconut milk (or cream) and lemon juice. Adjust seasoning with salt and pepper. Heat through and garnish with fresh herbs before serving.

Notes

  • For a thinner soup, add more broth during blending.
  • For a richer flavor, substitute coconut milk with heavy cream.
  • Serve with warm pita or crusty bread.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
