Description

Melted Mozzarella & Ranch Chicken Bombs are delicious bite-sized chicken pockets filled with gooey melted mozzarella cheese and a tangy ranch seasoning mix. These bombs are perfect for a quick dinner, appetizer, or game day snack!

Ingredients

Scale
  • 2 chicken breasts, cut into bite-sized pieces
  • 1 can refrigerated biscuit dough (8 biscuits)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons ranch seasoning mix (or homemade ranch seasoning)
  • 2 tablespoons olive oil
  • 1 tablespoon butter, melted
  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a baking dish or line a baking sheet with parchment paper.
  2. Cook the chicken: In a medium skillet, heat olive oil over medium heat. Add the chicken pieces and cook until fully cooked through, about 6-8 minutes. Stir in the ranch seasoning mix and cook for another minute. Remove from heat and set aside.
  3. Prepare the biscuit dough: Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a circle using your hands or a rolling pin.
  4. Assemble the chicken bombs: Place a spoonful of the cooked chicken mixture in the center of each flattened biscuit. Top with shredded mozzarella cheese. Carefully fold the edges of the biscuit over the filling and pinch them closed to form a ball or pocket.
  5. Brush with butter: Place the prepared chicken bombs into the greased baking dish or baking sheet. Brush each one with melted butter and sprinkle with garlic powder, paprika, and grated Parmesan cheese (if using).
  6. Bake the bombs: Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown and cooked through.
  7. Serve: Garnish with chopped parsley, if desired. Serve warm and enjoy!

Notes

  • For added flavor, you can dip the chicken bombs in extra ranch dressing or marinara sauce before serving.
  • If you prefer, you can substitute the mozzarella cheese with cheddar or pepper jack for a different twist.
  • Feel free to add some cooked bacon or sautéed onions to the filling for extra richness and flavor.
