  • 1 lb ground beef
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • For the Mac & Cheese:
  • 1 cup elbow macaroni (or pasta of choice)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Tacos:
  • 8 small soft flour tortillas
  • 1 tablespoon olive oil
  • 1/4 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • Pickles (optional)
  • Chopped onions (optional)
  • 1/2 cup salsa or taco sauce (optional)

Instructions

  1. Prepare the Burgers: Preheat a grill or skillet over medium heat. In a bowl, mix the ground beef with garlic powder, onion powder, salt, and pepper. Form into 4 burger patties. Place the shredded cheddar cheese on top of each patty and cook for 3-4 minutes per side, or until the burgers are cooked through and the cheese is melted. Set aside.
  2. Prepare the Mac & Cheese: Cook the elbow macaroni according to package instructions. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to make a roux. Slowly whisk in the milk and cook, stirring constantly, until the sauce thickens, about 3-4 minutes.
  4. Stir in the shredded cheddar cheese, garlic powder, salt, and pepper. Cook until the cheese has melted and the sauce is smooth. Add the cooked pasta to the sauce and stir to coat the macaroni in the cheese sauce. Set aside.
  5. Assemble the Tacos: Heat the flour tortillas in a dry skillet or microwave until warm and soft. Lightly brush each tortilla with olive oil to add a bit of crispness.
  6. Place a spoonful of mac & cheese in the center of each tortilla. Top with a burger patty and then add the shredded lettuce, diced tomatoes, pickles, and onions. Optionally, drizzle with salsa or taco sauce.
  7. Fold the tortillas around the fillings and serve immediately. Enjoy your melty, cheesy, burger-filled tacos!

  • You can make this dish even more indulgent by adding crispy bacon bits or jalapeños to the tacos.
