Description

These Mexican Chicken Pinwheels are a delightful blend of flavors wrapped in a soft tortilla. Cream cheese, spicy ranch dressing, shredded chicken, and zesty Rotel tomatoes come together for a refreshing and tasty appetizer or snack. Perfect for parties, game day, or as a fun lunch option!

  • 8 oz. cream cheese, softened
  • 12 tablespoons spicy ranch dressing
  • 10 oz can Rotel Mexican Lime & Cilantro diced tomatoes, drained
  • 1/41/2 cup red onions, diced
  • 2 chicken breasts, seasoned, cooked, and shredded
  • 1 cup Colby Jack cheese or Mexican blend cheese, shredded
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1/2 tablespoon oregano
  • Salt and pepper to taste
  • 6 large flour tortillas

Instructions

  • Mix Ingredients: In a large bowl, add the softened cream cheese, spicy ranch dressing, drained Rotel tomatoes, diced red onions, shredded chicken, shredded cheese, minced garlic, chili powder, oregano, and salt and pepper. Mix well after each addition.
  • Taste and Adjust: Taste the mixture and adjust the seasonings if needed, adding more ranch dressing or spices to suit your preference.
  • Spread the Mixture: Lay out a flour tortilla on a flat surface and spread about 1 cup of the chicken mixture evenly over it, leaving about an inch of space around the edges.
  • Roll Tightly: Starting from one end, tightly roll the tortilla away from you, ensuring the filling is enclosed.
  • Wrap and Chill: Wrap the rolled tortilla tightly in plastic wrap and refrigerate for at least one hour to help it hold its shape.
  • Slice and Serve: After chilling, remove the pinwheel from the fridge and unwrap. Using a sharp knife, slice the roll into 1- to 1.5-inch thick pieces. Arrange on a platter and serve.
