Instructions
- Prepare the corn: If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw and drain the kernels.
- Make the fritter batter: In a large bowl, combine the flour, cornmeal, baking powder, salt, pepper, chili powder, and garlic powder. Add the eggs, mayonnaise, lime juice, and milk, and stir to combine. The batter should be thick but pourable. Add a little more milk if needed to reach the right consistency.
- Add the corn and mix: Fold the corn kernels, chopped cilantro, and cotija cheese into the batter until evenly incorporated.
- Heat the oil: Heat about 1/2 inch of vegetable oil in a large skillet or frying pan over medium heat. You can test the oil by dropping a small spoonful of batter into it – if it sizzles, the oil is ready.
- Fry the fritters: Scoop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon to form small fritters. Fry the fritters for about 2-3 minutes per side, or until golden brown and crispy. Work in batches to avoid overcrowding the pan.
