Ingredients

Scale

For the Street Corn Mixture:

  • 3 cups fresh or frozen corn kernels (about 3 ears of corn, grilled and cut off the cob, or use canned corn)
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream or Mexican crema
  • 1 tbsp lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • 1/2 tsp garlic powder
  • Salt, to taste
  • 1/4 cup cotija cheese, crumbled
  • 1 tbsp fresh cilantro, chopped (optional, for garnish)

For the Tostadas:

  • 6 small tostada shells (store-bought or homemade)
  • 1/4 cup crumbled cotija cheese (for topping)
  • Fresh cilantro leaves, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Street Corn:
    • If using fresh corn, grill or roast the corn until lightly charred, then carefully cut the kernels off the cob. If using frozen corn, thaw it, and if using canned corn, drain and rinse.
    • In a bowl, combine the corn with mayonnaise, sour cream (or Mexican crema), lime juice, chili powder, smoked paprika, cayenne pepper (if using), garlic powder, and salt. Mix well until the corn is fully coated.
  2. Assemble the Tostadas:
    • Arrange the tostada shells on a serving platter.
    • Spoon a generous amount of the street corn mixture onto each tostada, spreading it evenly.
  3. Garnish:
    • Sprinkle crumbled cotija cheese and fresh cilantro on top of the corn mixture.
    • Serve with lime wedges for squeezing over the top just before eating.
  4. Serve and Enjoy:
    • Serve immediately as a delicious appetizer or snack. Enjoy the combination of creamy, crunchy, and spicy flavors!

Notes

  • You can make your own tostada shells by frying corn tortillas in hot oil until golden and crispy, then draining on paper towels.
  • If you like your tostadas extra spicy, feel free to drizzle some hot sauce over the top.
  • These tostadas are best served immediately after assembling for the best crispy texture.
