Description

This easy and hearty Mexican White Trash Casserole is a delicious blend of seasoned ground beef, creamy soup, and crunchy tortilla chips, perfect for a quick weeknight meal or a crowd-pleasing potluck dish.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 can (10 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag (9 oz) tortilla chips, slightly crushed
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/4 cup diced green onions (optional)
  • Salsa and sour cream for garnish (optional)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
  • Cook the Ground Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat and stir in the taco seasoning according to package instructions.
  • Add Other Ingredients: Once the beef is seasoned, add the Rotel tomatoes, cream of chicken soup, and sour cream. Stir until well combined.
  • Layer the Casserole: In the prepared casserole dish, spread a layer of crushed tortilla chips at the bottom. Pour half of the beef mixture on top, followed by a layer of corn, black beans, and half of the shredded cheese. Repeat the layers with the remaining beef mixture, chips, and cheese.
  • Bake: Cover the casserole with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  • Serve: Top with diced green onions if using, and serve with salsa and sour cream on the side.

Crunchy Texture Tip: Crush the tortilla chips only slightly to maintain a crunchy texture in each bite.
