Description
Juicy, spiced ground meat skewers made with herbs and warm Middle Eastern spices. These kofta kebabs are grilled to perfection and served with pita, tahini, or rice.
Ingredients

- 1 lb (450g) ground beef or lamb (or a mix)
- 1 small onion, finely grated
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/2 tsp cayenne pepper (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Wooden or metal skewers (if wooden, soak for 30 minutes)
Instructions
- In a large bowl, combine the ground meat, grated onion, garlic, parsley, cilantro, and all the spices. Mix thoroughly until well combined.
- Divide the mixture into 6–8 portions and shape each portion around a skewer into a log or oval shape.
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
- Grill the kebabs for 10–12 minutes, turning occasionally, until browned on the outside and cooked through.
- Remove from the grill and let rest for a couple of minutes before serving.
- Serve hot with pita bread, tahini sauce, or over rice with a side of salad.
Notes
- For a juicier kebab, add a tablespoon of plain yogurt or a grated tomato to the mix.
- You can bake the kebabs in the oven at 400°F (200°C) for 20–25 minutes if grilling isn’t an option.
- Adjust cayenne for spice level preference.
