Description

Juicy, spiced ground meat skewers made with herbs and warm Middle Eastern spices. These kofta kebabs are grilled to perfection and served with pita, tahini, or rice.


Ingredients

Scale
  • 1 lb (450g) ground beef or lamb (or a mix)
  • 1 small onion, finely grated
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • Wooden or metal skewers (if wooden, soak for 30 minutes)

Instructions

  1. In a large bowl, combine the ground meat, grated onion, garlic, parsley, cilantro, and all the spices. Mix thoroughly until well combined.
  2. Divide the mixture into 6–8 portions and shape each portion around a skewer into a log or oval shape.
  3. Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
  4. Grill the kebabs for 10–12 minutes, turning occasionally, until browned on the outside and cooked through.
  5. Remove from the grill and let rest for a couple of minutes before serving.
  6. Serve hot with pita bread, tahini sauce, or over rice with a side of salad.

Notes

  • For a juicier kebab, add a tablespoon of plain yogurt or a grated tomato to the mix.
  • You can bake the kebabs in the oven at 400°F (200°C) for 20–25 minutes if grilling isn’t an option.
  • Adjust cayenne for spice level preference.
