- 3 cups cooked chicken, shredded or diced
- 3 cups cooked white rice
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- ½ cup chicken broth
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
- ½ cup crushed Ritz crackers (optional, for topping)
- 2 tbsp melted butter (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- In a large mixing bowl, combine the softened cream cheese, sour cream, cottage cheese, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until smooth.
- Add the cooked chicken and cooked rice to the mixture and stir until everything is well incorporated.
- Spread the mixture evenly into the prepared baking dish.
- If using, mix the crushed Ritz crackers with melted butter and sprinkle over the top of the casserole.
- Bake uncovered for 25-30 minutes, or until the casserole is bubbly and golden on top.
- Remove from the oven and let it rest for a few minutes before serving.
