Description

A creamy and cheesy chicken and rice casserole that’s perfect for family dinners, combining tender chicken, flavorful cheeses, and a crunchy topping for a satisfying meal.


Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 3 cups cooked white rice
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup chicken broth
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • ½ cup crushed Ritz crackers (optional, for topping)
  • 2 tbsp melted butter (optional, for topping)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  • In a large mixing bowl, combine the softened cream cheese, sour cream, cottage cheese, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  • Add the cooked chicken and cooked rice to the mixture and stir until everything is well incorporated.
  • Spread the mixture evenly into the prepared baking dish.
  • If using, mix the crushed Ritz crackers with melted butter and sprinkle over the top of the casserole.
  • Bake uncovered for 25-30 minutes, or until the casserole is bubbly and golden on top.
  • Remove from the oven and let it rest for a few minutes before serving.
