Ingredients
Scale
- 6 hard-boiled eggs, cooled and peeled
- 3 tablespoons mayonnaise
- 1 tablespoon sweet pickle juice
- 1 tablespoon butter, room temperature or softened
- 2 slices bacon, cooked and crumbled
- 1 teaspoon mustard
- Salt and pepper, to taste
- Paprika, for garnish (optional)
Instructions
- Prepare the Eggs: Slice the hard-boiled eggs in half lengthwise and carefully remove the yolks. Place the yolks in a medium mixing bowl.
- Make the Filling: Add mayonnaise, pickle juice, butter, crumbled bacon, mustard, salt, and pepper to the bowl with the yolks. Mix until the filling is smooth and creamy. For an extra-smooth texture, push the mixture through a sieve.
- Fill the Egg Whites: Spoon or pipe the yolk mixture back into the egg white halves.
- Garnish: Sprinkle with paprika and optionally garnish with fresh herbs or additional crumbled bacon for added flavor.
- Serve: Serve immediately or refrigerate until ready to enjoy.
Notes
- Smooth Texture Tip: For an ultra-smooth filling, use a sieve to remove any lumps before filling the eggs.
- Make Ahead: You can make the filling ahead of time and refrigerate it until you’re ready to fill the eggs.
- Bacon Variations: Use turkey bacon or skip the bacon for a vegetarian version.
- Add More Flavor: Experiment with other ingredients like hot sauce or garlic powder for a more personalized touch.
