- 2 medium eggplants, diced
- 1 onion, chopped
- 3 cloves garlic, minced

- 1 tsp ground paprika
- 1/2 tsp ground cinnamon

- 1/4 tsp ground black pepper
- 1 tbsp olive oil
- Salt to taste
- Fresh parsley for garnish (optional)
- 1/2 cup tomato paste
- 1/2 cup beef broth (or water)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
- Add the minced beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the ground cumin, paprika, cinnamon, turmeric, and black pepper. Cook for another minute until fragrant.
- Add the diced eggplant to the skillet and cook for about 5 minutes, stirring occasionally, until the eggplant softens.
- Stir in the tomato paste and beef broth (or water). Cover and simmer for 15-20 minutes, until the eggplant is tender and the flavors have melded together.
- Season with salt to taste and garnish with fresh parsley, if desired.
- Serve hot with rice, bread, or a side of your choice.
Notes
- If you prefer a spicier dish, add a pinch of chili flakes or fresh chili peppers.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
