Ingredients

Scale

For the Mini Waffles:

  • 1 cup all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 3/4 cup milk
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

For the Cream Filling:

  • 1/2 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup mascarpone cheese (optional for extra richness)

For the Berry Topping:

  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries, etc.)
  • 12 tbsp honey or maple syrup (optional)

Instructions

  1. Make the Mini Waffles:
Preheat your waffle maker according to the manufacturer’s instructions.
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but pourable.
Lightly grease your waffle maker and pour a small amount of batter onto the waffle maker to create mini waffles. Cook according to the manufacturer’s instructions until golden brown and crisp. Repeat with the remaining batter.
  2. Make the Cream Filling:
In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer until soft peaks form.
For extra richness, gently fold in the mascarpone cheese to the whipped cream.
  3. Prepare the Berries:
Wash and prepare the mixed berries. If using strawberries, hull and slice them.
Toss the berries with honey or maple syrup if you want extra sweetness.
  4. Assemble the Waffle Sandwiches:
Once the mini waffles have cooled slightly, spread a dollop of the cream filling on the bottom of one waffle. Top with a few fresh berries and then place another waffle on top to form a sandwich. Repeat with the remaining waffles.
  5. Serve and Enjoy:
Serve the mini waffle sandwiches immediately for a fresh and delicious treat! These are perfect for breakfast, brunch, or even a sweet snack.
