Ingredients
1 cup graham cracker crumbs
2 tbsp sugar
1/4 cup melted butter
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1/2 cup heavy cream
Fresh cherries
Cherry syrup or topping
Instructions
- repare the Base: In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into small circles on a lined baking sheet to form the base for the cheesecake bites. Chill in the fridge for 10 minutes.
- Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Slowly add the heavy cream and continue beating until the mixture is light and fluffy.
- Assemble the Bites: Spoon the cheesecake filling onto the chilled graham cracker bases.
- Top with Cherries: Add a few fresh cherries on top of each cheesecake bite and drizzle with cherry syrup.
- Chill: Refrigerate for at least 1 hour before serving to allow the flavors to set.
Notes
Coconut Milk Tip: If your coconut milk is separated, whisk the can’s contents in a bowl until smooth, then use half for the recipe. Save the rest for another dish.
