- 1/4 cup cream cheese, softened
- 1 tablespoon Dijon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Fresh dill, chopped (for garnish)
For the Egg Wash:
- 1 egg, beaten
- Optional: Sesame seeds or everything bagel seasoning for sprinkling
Instructions
- Prepare the Pastry:
- In a mixing bowl, whisk together the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare the Filling:
- In a small bowl, mix the cream cheese, Dijon mustard, garlic powder, and onion powder until smooth.
- Roll and Cut the Pastry:
- On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into 4–6 inch circles using a cookie cutter or the rim of a glass.
- Assemble the Galettes:
- Spread a small dollop of the cream cheese mixture in the center of each pastry circle. Top with a few pickle slices.
- Fold the edges of the pastry slightly over the filling, leaving the center exposed.
- Add the Finishing Touches:
- Brush the edges of the pastry with the beaten egg. Sprinkle with sesame seeds or everything bagel seasoning, if desired.
- Bake the Galettes:
- Place the galettes on the prepared baking sheet and bake for 20–25 minutes, or until the crust is golden brown and crispy.
- Garnish and Serve:
- Let the galettes cool slightly. Garnish with fresh dill and serve warm or at room temperature.
