  • 1/4 teaspoon onion powder

  • 1 egg, beaten
  • Optional: Sesame seeds or everything bagel seasoning for sprinkling

Instructions

  1. Prepare the Pastry:
    • In a mixing bowl, whisk together the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  3. Prepare the Filling:
    • In a small bowl, mix the cream cheese, Dijon mustard, garlic powder, and onion powder until smooth.
  4. Roll and Cut the Pastry:
    • On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into 4–6 inch circles using a cookie cutter or the rim of a glass.
  5. Assemble the Galettes:
    • Spread a small dollop of the cream cheese mixture in the center of each pastry circle. Top with a few pickle slices.
    • Fold the edges of the pastry slightly over the filling, leaving the center exposed.
  6. Add the Finishing Touches:
    • Brush the edges of the pastry with the beaten egg. Sprinkle with sesame seeds or everything bagel seasoning, if desired.
  7. Bake the Galettes:
    • Place the galettes on the prepared baking sheet and bake for 20–25 minutes, or until the crust is golden brown and crispy.
