Description

  • 1 cup freeze-dried strawberries, crushed
  • 1/2 cup strawberry jam or preserves

Instructions

  1. In a medium mixing bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture. Add vanilla extract and mix until combined.
  3. In a separate small bowl, combine the graham cracker crumbs and melted butter, then press a spoonful of this mixture into the bottoms of mini muffin liners or a mini muffin tin to form a crust.
  4. Top the graham cracker crust with a spoonful of the cheesecake filling, smoothing the top to create an even layer.
  5. In another bowl, combine the crushed freeze-dried strawberries with the strawberry jam. Spoon this mixture over the cheesecake filling, creating a layer of strawberry crunch topping.
  6. Chill in the refrigerator for at least 2 hours, or until firm and set.
