- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup chopped green onions (optional)
- Sour cream, salsa, and chopped cilantro for topping
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
- In a skillet, cook ground beef over medium heat until browned; drain excess fat.
- Add taco seasoning and water; simmer for 5 minutes until thickened. Remove from heat.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, combine milk, melted butter, and eggs.
- Gradually add wet ingredients to dry ingredients; mix until just combined.
- Fold in shredded cheddar cheese and green onions.
- Fill muffin cups halfway with batter, then add a spoonful of seasoned beef, and cover with more batter.
- Bake for 20-25 minutes, or until a toothpick inserted in the batter comes out clean.
- Cool slightly, then top with sour cream, salsa, and cilantro before serving.
Notes
- Use your favorite taco seasoning or homemade blend.
- Add jalapeños for extra heat.
- These can be made ahead and reheated before serving.
