Description

Mini savory cupcakes made with seasoned ground beef and cheese, perfect for parties or appetizers with a fun taco twist.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup chopped green onions (optional)
  • Sour cream, salsa, and chopped cilantro for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. In a skillet, cook ground beef over medium heat until browned; drain excess fat.
  3. Add taco seasoning and water; simmer for 5 minutes until thickened. Remove from heat.
  4. In a bowl, whisk together flour, baking powder, and salt.
  5. In another bowl, combine milk, melted butter, and eggs.
  6. Gradually add wet ingredients to dry ingredients; mix until just combined.
  7. Fold in shredded cheddar cheese and green onions.
  8. Fill muffin cups halfway with batter, then add a spoonful of seasoned beef, and cover with more batter.
  9. Bake for 20-25 minutes, or until a toothpick inserted in the batter comes out clean.
  10. Cool slightly, then top with sour cream, salsa, and cilantro before serving.

Notes

  • Use your favorite taco seasoning or homemade blend.
  • Add jalapeños for extra heat.
