- 1 tsp vanilla extract
- 1/2 tsp mint extract (or more to taste)
- 1 cup heavy whipping cream
- 1 tbsp green food coloring (optional, for color)
For the Topping:
- 1/4 cup mini chocolate chips
- Fresh mint leaves for garnish (optional)
Instructions
- Prepare the Brownie Layer: Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners. Prepare the brownie mix according to package instructions. Spoon about 1-2 tablespoons of brownie batter into each muffin liner, filling about halfway. Add mini chocolate chips on top of the batter if desired. Bake according to the box instructions, typically for 15-18 minutes, or until a toothpick comes out clean. Let the brownies cool completely.
- Make the Cheesecake Layer: In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and mint extract until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Add green food coloring if desired for a minty green color.
- Assemble the Cups: Once the brownie layers are fully cooled, spoon a generous amount of the cheesecake mixture on top of each brownie. Use a spatula to smooth the tops, and then refrigerate the cups for at least 2 hours to set.
- Top and Serve: Once set, top each cheesecake cup with a sprinkle of mini chocolate chips and fresh mint leaves for garnish. Serve chilled.
