These soft, chewy cookies are bursting with minty flavor and loaded with delicious chocolate chips—perfect for mint chocolate lovers!

Ingredients

Scale

Baking & Spices:

  • 1¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar

Dairy:

  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 large egg yolk

Flavoring:

  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract

Chocolate:

  • 1½ cups semi-sweet chocolate chips
  • ½ cup green chocolate chips (optional for extra minty color)

Instructions

  • Preheat Oven and Prepare Baking Sheets:
    • Preheat your oven to 350°F (180°C). Line two baking sheets with parchment paper or silicone baking mats.
  • Mix Dry Ingredients:
    • In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  • Cream Butter and Sugars:
    • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
    • Add the vanilla and peppermint extracts, followed by the egg and egg yolk. Mix until smooth.
  • Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  • Fold in Chocolate Chips:
    • Gently fold in the semi-sweet chocolate chips and green chocolate chips (if using) until evenly distributed.
  • Scoop Dough and Shape Cookies:
    • Use a tablespoon or cookie scoop to drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
    • Gently press the dough down with your fingers to slightly flatten.
  • Bake:
    • Bake for 10-12 minutes or until the edges are golden but the centers are still soft.
    • Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Serve:
    • Enjoy the minty, chocolatey goodness of these delicious cookies!

Notes

  • Use Fresh Eggnog: For the best flavor, use fresh eggnog instead of the powdered variety. Fresh eggnog adds a rich, creamy texture and depth of flavor to the cookies.
  • Softening Butter: Make sure the butter is softened to room temperature for easier mixing and a smoother dough. If you forget to soften it, you can microwave it in 10-second increments until soft.
  • Don’t Overbake: These cookies are meant to be soft and chewy. Take them out of the oven as soon as the edges begin to turn golden to ensure a melt-in-your-mouth texture.
  • Chill the Dough: If you have the time, chill the dough in the fridge for 30 minutes before rolling it into balls. This will help the cookies maintain their shape while baking.
  • Customizing Spice Levels: Adjust the nutmeg to your taste. If you want a stronger eggnog flavor, you can increase the nutmeg or even add a dash of cinnamon.
