This decadent Mississippi Mud Cake features a rich chocolate base, gooey marshmallow layer, and a perfect combination of creamy frosting and crunchy nuts. It’s a must-try dessert for chocolate lovers!

Ingredients

Scale

For the cake:

  • 1 cup butter, melted
  • 1/2 cup cocoa powder
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup milk

For the topping:

  • 1 1/2 cups mini marshmallows
  • 1/2 cup chopped pecans or walnuts (optional)

For the frosting:

  • 1/2 cup butter
  • 1/4 cup cocoa powder
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine melted butter, cocoa powder, and granulated sugar. Stir in the eggs and vanilla extract until smooth.
  3. Add flour, salt, baking powder, and milk, and mix until combined. Pour the batter into the prepared baking dish.
  4. Bake the cake for 30-35 minutes or until a toothpick comes out clean.
  5. While the cake is still warm, sprinkle mini marshmallows over the top and return it to the oven for an additional 2-3 minutes, just until the marshmallows soften.
  6. Remove from the oven and let the cake cool slightly.
  7. For the frosting: In a saucepan, melt butter and cocoa powder over medium heat. Stir in powdered sugar, milk, and vanilla extract. Whisk until smooth.
  8. Pour the frosting over the warm cake. Top with chopped nuts if desired.
  9. Allow the cake to cool completely before cutting into squares and serving.

Notes

  • For a richer flavor, use dark chocolate cocoa powder.
  • The cake can be served warm or at room temperature, and the frosting will set as it cools.
