Description

A rich and flavorful baked chicken dish coated in a dark, savory sauce reminiscent of Mississippi mud, perfect for a hearty meal.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup Worcestershire sauce
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large ovenproof skillet over medium-high heat.
  3. Season chicken thighs with salt, pepper, and smoked paprika.
  4. Brown chicken on both sides, about 5 minutes per side, then remove from skillet.
  5. In the same skillet, sauté onion and garlic until softened.
  6. Stir in tomato paste, brown sugar, Worcestershire sauce, soy sauce, and beef broth; simmer for 5 minutes.
  7. Return chicken to skillet, spoon sauce over the top.
  8. Transfer skillet to oven and bake for 25-30 minutes until chicken is cooked through.
  9. Garnish with fresh parsley before serving.

Notes

  • Serve with mashed potatoes or rice to soak up the sauce.
  • Use boneless chicken thighs if preferred; adjust cooking time accordingly.
  • Add mushrooms to the sauce for extra depth.
