Description

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • 1 cup M&M’s (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter and peanut butter together until smooth. Add sugar and beat until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Gradually add the flour mixture, alternating with the buttermilk, beginning and ending with the flour mixture.
  6. Fold in 1 cup of M&M’s.
  7. Pour batter into the prepared cake pan and smooth the top. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. While the cake is cooling, prepare the frosting: Beat together 1/2 cup unsalted butter and 3/4 cup creamy peanut butter until fluffy. Add 1 1/2 cups powdered sugar and 2–3 tablespoons milk, and beat until smooth and spreadable.
  10. Frost the cooled cake and top with extra M&M’s.

Notes

  • Use mini M&M’s for better distribution throughout the cake batter.
  • Chill the frosted cake for 20 minutes before slicing for cleaner cuts.
  • Add chopped roasted peanuts on top for an extra crunchy texture.
