- 200g dark chocolate (70% cocoa), chopped
- 100g unsalted butter
- 3 large eggs
- 100g granulated sugar
- 1 tsp vanilla extract
- 50g all-purpose flour
- A pinch of salt
- Cocoa powder (for dusting the ramekins)
- Butter (for greasing the ramekins)
Instructions
- Preheat the oven to 375°F (190°C). Grease 4 individual ramekins with butter and dust with cocoa powder.
- In a medium saucepan, melt the butter and chopped chocolate together over low heat, stirring frequently until smooth. Remove from heat and let cool slightly.
- In a mixing bowl, whisk the eggs and sugar together until thickened and pale. Add the vanilla extract and stir to combine.
- Pour the melted chocolate mixture into the egg mixture and gently fold until fully combined.
- Sift the flour and salt over the chocolate mixture and fold until smooth. Be careful not to overmix.
- Divide the batter evenly among the prepared ramekins, filling them about 3/4 of the way full.
- Bake for 10–12 minutes, or until the edges are set but the center is still soft and slightly wobbly. The top should look firm and slightly cracked.
- Allow the cakes to cool for 2–3 minutes before running a knife around the edges of each ramekin to loosen. Carefully invert onto plates.
- Serve immediately with whipped cream, vanilla ice cream, or a dusting of powdered sugar, and enjoy the molten center!
Notes
- Be careful not to overbake the cakes, as the molten center is key to the recipe.
- If you don’t have ramekins, you can use muffin tins as a substitute, but adjust the baking time accordingly.
- For a richer flavor, try using a higher percentage of dark chocolate (85% or more).
- The batter can be prepared in advance and kept in the fridge for up to 24 hours before baking.
