Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.
  3. Cream the butter and sugar: In a large bowl, beat the softened butter with the granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Add wet ingredients: Mix in the molasses, egg, and vanilla extract, and beat until smooth.
  5. Combine the dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until combined and the dough is smooth.
  6. Shape the cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar to coat it completely.
