Description

These Mounds Brownies are the perfect combination of rich, fudgy brownies and coconut-covered chocolate goodness, inspired by the classic Mounds candy bar. With a layer of coconut and a chocolatey top, these brownies are a sweet treat everyone will love!


Ingredients

  • For the Brownies:

    • 1 cup (2 sticks) unsalted butter, melted

    • 1 1/4 cups granulated sugar

    • 1/4 cup light brown sugar, packed

    • 4 large eggs

    • 1 tsp vanilla extract

    • 1/2 cup all-purpose flour

    • 1/2 cup unsweetened cocoa powder

    • 1/4 tsp salt

    • 1/4 tsp baking powder

    • 1/2 cup chocolate chips (optional)

  • For the Coconut Layer:

    • 1 1/2 cups sweetened shredded coconut

    • 1/4 cup sweetened condensed milk

    • 1/2 tsp vanilla extract

  • For the Topping:

    • 1 cup semi-sweet chocolate chips

    • 2 tbsp unsalted butter


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.

  2. Make the Brownies:
    In a large bowl, mix the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs and vanilla extract, and stir until well combined.

  3. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated. Fold in the chocolate chips (if using).

  4. Pour the brownie batter into the prepared baking pan and spread it out evenly. Bake for 20-25 minutes, or until a toothpick inserted comes out with only a few moist crumbs. Let the brownies cool slightly while you prepare the coconut layer.

  5. Make the Coconut Layer:
    In a small bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.

  6. Once the brownies have cooled for about 10 minutes, spread the coconut mixture evenly on top of the brownies.

  7. Make the Topping:
    In a microwave-safe bowl, melt the chocolate chips and butter together, stirring every 30 seconds, until smooth and fully melted.

  8. Pour the melted chocolate over the coconut layer and spread it out evenly with a spatula. Let the brownies cool completely, then refrigerate for at least 1 hour to set the topping.

  9. Once cooled and set, cut into squares and serve.

Notes

  • For an extra flavor boost, you can add a pinch of sea salt on top of the chocolate layer before it sets.

  • These brownies are best when chilled, as the chocolate topping will harden and give them a firmer texture.

 

  • If you’re not a fan of coconut, you can leave it out, but it won’t have that signature Mounds bar flavor.
