  • For the Onion Rings:

    • 2 large onions, peeled and sliced into 1/2-inch thick rings

    • 8 oz mozzarella cheese, cut into sticks or cubes

    • 1 cup all-purpose flour

    • 1 tsp salt

    • 1/2 tsp black pepper

    • 1 tsp garlic powder

    • 1 tsp paprika

    • 2 large eggs, beaten

    • 1 1/2 cups breadcrumbs (panko or regular)

    • 1/2 cup grated Parmesan cheese

    • Vegetable oil, for frying

  • For the Garlic Butter Sauce:

    • 1/4 cup unsalted butter

    • 3 cloves garlic, minced

    • 1 tbsp fresh parsley, chopped

    • 1/4 tsp red pepper flakes (optional, for heat)

    • Salt, to taste


Instructions

  1. Prepare the onion rings:

    • Cut the onions into 1/2-inch thick rings and separate them carefully. Set aside.

    • Cut the mozzarella cheese into sticks or cubes that are about the size of the onion rings, as these will be stuffed inside.

  2. Stuff the onion rings:

    • Take a few onion rings and stuff each one with a piece of mozzarella cheese. Stack the rings, so you have a filled onion ring with cheese in the center. Repeat until all onion rings are stuffed.

  3. Prepare the breading station:

    • In one shallow bowl, mix the flour, salt, pepper, garlic powder, and paprika.

    • In a second shallow bowl, beat the eggs.

    • In a third shallow bowl, combine the breadcrumbs and Parmesan cheese.

  4. Coat the onion rings:

    • Dredge each stuffed onion ring in the flour mixture, making sure it’s evenly coated.

    • Dip it into the beaten eggs, and then coat it in the breadcrumb mixture, pressing lightly to ensure the breadcrumbs stick.

  5. Fry the onion rings:

    • Heat vegetable oil in a deep pan or fryer to 350°F (175°C).

    • Fry the coated onion rings in batches for 2-3 minutes, or until golden brown and crispy on all sides. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

  6. Make the garlic butter sauce:

    • While the onion rings are frying, melt the butter in a small saucepan over medium heat.

    • Add the minced garlic and cook for 1-2 minutes until fragrant, but not browned.

    • Stir in the chopped parsley, red pepper flakes (if using), and salt to taste. Remove from heat.

  7. Serve:

    • Once the onion rings are done, drizzle the garlic butter sauce over the crispy onion rings. Serve immediately, garnished with extra parsley if desired.

Notes

  • Oven-baked option: To make a healthier version, bake the breaded onion rings in a preheated oven at 400°F (200°C) for about 15-20 minutes, flipping halfway through until golden brown.

  • Cheese options: You can substitute mozzarella with other meltable cheeses like cheddar, provolone, or gouda for a different flavor.
