- 1 French baguette, sliced into 1/2-inch thick pieces
- 2 tbsp Olive oil
- 1 lb Mushrooms (button, cremini, or a mix), cleaned and sliced
- 2 cloves Garlic, minced
- 1/4 cup Dry white wine (optional)
- 1 tbsp Fresh thyme leaves (or 1 tsp dried thyme)
- 1/2 cup Gruyère cheese, grated
- 1/4 cup Heavy cream (optional, for creamier mushrooms)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Arrange the baguette slices in a single layer on a baking sheet. Brush both sides lightly with olive oil and toast in the oven for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- While the bread is toasting, heat 1 tbsp of olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook for 5-7 minutes, until they release their moisture and start to brown.
- Add the minced garlic and thyme to the mushrooms, and cook for another 2-3 minutes until fragrant. If desired, pour in the white wine and cook for another 1-2 minutes, allowing the wine to reduce. Season with salt and pepper to taste.
- If using, stir in the heavy cream and cook for an additional 2 minutes until the sauce thickens and becomes creamy.
- Once the baguette slices are toasted, spoon the mushroom mixture onto each crostini. Top each with a generous amount of grated Gruyère cheese.
- Return the crostini to the oven for 3-5 minutes, or until the cheese is melted and bubbly.

Notes
- For added depth of flavor, you can sauté the mushrooms in butter instead of olive oil.
