Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Add chopped mushrooms and sauté until golden brown and tender, about 5-7 minutes.
- Add minced garlic, dried thyme, salt, and pepper to the skillet. Cook for another minute until fragrant. Remove from heat and let cool slightly.
- Roll out the puff pastry sheet on a lightly floured surface. Cut into small squares or rectangles.
- Spoon a small amount of the mushroom mixture onto each pastry square. Sprinkle with grated Parmesan cheese.
- Fold the pastry over the filling to create triangles or rectangles. Press the edges with a fork to seal.
- Place the pastry bites on the prepared baking sheet. Brush each with beaten egg for a golden finish.
- Bake for 15-20 minutes, or until the pastry is puffed and golden brown.
- Remove from the oven and let cool for a few minutes before serving. Garnish with chopped fresh parsley.
