Ingredients
Scale
- 2 cups mushrooms, sliced (button or cremini mushrooms work well)
- 1 medium onion, thinly sliced
- 2 tablespoons butter (for sautéing)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon thyme (optional)
- Salt and pepper, to taste
- 4 slices sourdough or any hearty bread
- 4 slices of cheese (Swiss, cheddar, or mozzarella)
- 2 tablespoons butter (for grilling)
Instructions
-
Sauté the Mushrooms:
- In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat.
- Add the sliced mushrooms and onions, and sauté until the mushrooms release their moisture and become golden brown, about 7-10 minutes.
- Add the minced garlic and thyme (if using), and cook for an additional 1-2 minutes until fragrant.
- Season with salt and pepper to taste. Remove from heat and set aside.
-
Assemble the Sandwiches:
- Lay out the slices of bread on a clean surface.
- Spoon the sautéed mushrooms and onions evenly onto 2 slices of bread.
- Place a slice of cheese on top of each mushroom pile.
- Top with the remaining slices of bread.
-
Grill the Sandwiches:
- Heat a nonstick skillet or griddle over medium-low heat.
- Butter the outside of the sandwiches with 1-2 tablespoons of butter.
- Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
-
Serve:
- Once the sandwiches are crispy and golden, remove from the skillet and cut in half. Serve immediately.
Notes
- For added flavor, try using different cheese combinations like sharp cheddar and Gruyère for a more complex taste.
- You can add a handful of fresh spinach or arugula to the sandwiches for a bit of greenery and extra flavor.
- Serve with a side of chips or a light salad for a complete meal.
