  • 4 slices sourdough or any hearty bread
  • 4 slices of cheese (Swiss, cheddar, or mozzarella)
  • 2 tablespoons butter (for grilling)

Instructions

  1. Sauté the Mushrooms:

    • In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat.
    • Add the sliced mushrooms and onions, and sauté until the mushrooms release their moisture and become golden brown, about 7-10 minutes.
    • Add the minced garlic and thyme (if using), and cook for an additional 1-2 minutes until fragrant.
    • Season with salt and pepper to taste. Remove from heat and set aside.
  2. Assemble the Sandwiches:

    • Lay out the slices of bread on a clean surface.
    • Spoon the sautéed mushrooms and onions evenly onto 2 slices of bread.
    • Place a slice of cheese on top of each mushroom pile.
    • Top with the remaining slices of bread.
  3. Grill the Sandwiches:

    • Heat a nonstick skillet or griddle over medium-low heat.
    • Butter the outside of the sandwiches with 1-2 tablespoons of butter.
    • Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
  4. Serve:

    • Once the sandwiches are crispy and golden, remove from the skillet and cut in half. Serve immediately.
