A quick and easy version of the classic Vietnamese pho, featuring tender beef, rich broth, and fresh, flavorful add-ins like cilantro, bean sprouts, and jalapeños. Perfect for a comforting meal!

- 3 pounds beef neck bones or shank bones
- 1 pound beef fillet or beef shave
- 2 turnips, sliced in big chunks
- 1 ginger, roasted
- 1 large onion, roasted
- 1 package rice noodles, cooked and drained
- Add-ins vegetables: cilantro, basil, green onions, sliced onions, bean sprouts, and jalapeño
- 3 tbsp soy sauce
- Salt and pepper to taste
Instructions
- Fill a large pot with water, about 3/4 or just above half full. Add the beef neck bones, ginger, onion, and turnips.
- Add 3 tablespoons of fish sauce or soy sauce.
- Bring the mixture to a boil, then remove any foam that forms on top.
- Reduce the heat and slow-cook for 1-2 hours to allow the flavors to develop into a rich, flavorful broth. Season with salt and pepper to taste.
- While the broth is cooking, prepare the rice noodles according to package instructions, then drain and set aside.
- In a large bowl, add the rice noodles, fillet of beef, green onion, jalapeño, bean sprouts, sliced onion, cilantro, or basil.
- Pour the hot broth over the noodles and beef.
- Serve and enjoy!
Notes
- Feel free to adjust the seasonings to taste, adding more soy sauce or fish sauce for extra flavor.
- Roast the ginger and onion for a deeper, smoky flavor in the broth.
